Potato Pancake

Potato PancakeThis potato pancake recipe, will be a great addition to your breakfast or appetizer recipe collections.

In order to make this simple pancake, you’ll only need: potato, onion, egg, salt, pepper and ketchup. Since they are so common, I bet you already have them in the kitchen. Cheers to no need for a grocery run!

Are you ready to get started? I know I can’ t wait to show you how I made it.

Pan Fry the Potato PancakeFirst, I cooked the potato (cut into slices) and onions (shredded) separately (check out the recipe at the end for more details). Next, I emptied the non-stick pan, laid down the potato slices on the bottom and sprinkled the cooked onions evenly on top.

Potato Pancake PictureAt last, I poured the egg mixture around the pan until it forms a round shape. After waited a couple minutes for the egg to turn firm, I carefully flipped the entire pancake with the help of a big flat plate and pan-fried the other side for a couple of minutes till the pancake’s fully cooked.

That’s it,  that’s how I made this delicious potato pancake in three easy steps!

I like the combo of potato pancake with ketchup. Feel free to change things up and use your favorite sauce instead.

Serves: 4
Ingredients
  • 1 potato, sliced
  • half a onion, sliced
  • 2 eggs, beaten
  • 2 tablespoons oil
  • ½ teaspoon salt
  • ½ tablespoon black pepper
Instructions
  1. Crack two eggs, after beating, toss in salt and black pepper, mix well and set aside.
  2. Heat 1 tablespoon of oil in a pan over medium-low heat, pan fry the potato for about 10 minutes until crisp and cooked through and remove from the pan.
  3. Add in another tablespoon of oil into the pan, and stir in the onion, stir fry for 8-10 minutes until browned and soft, set aside.
  4. Carefully lay the potato slices back onto the pan and sprinkle the cooked onion on top of the potato, keep the heat at medium-low, gently pour the egg mixture around the pan, wait for 3-4 minutes until the egg has became firm.
  5. Carefully flip the pancake (I used a big flat plate to help turn the pancake without breaking it) and cook for another 2-3 minutes.
  6. Dip with ketchup to serve.
