Spicy Ground Beef and Breen Beans-1 This spicy ground beef and green beans is one of the most popular dishes in China, originated from Szechuan cuisine. It is also one of my favorite dishes.

First, I deep fried the green beans until crisp outside, then sautéed the garlic, ginger and dried chili pepper until fragrant.

Spicy ground beef and green beans

Ingredients

1 pound green beans, ends trimmed, let dry
⅕ pound ground beef
2 dried chili peppers, cut into small pieces
1 tablespoon minced garlic
½ tablespoon minced ginger
For marinating the beef:
a touch of salt
a touch of sugar
a touch of oil
1 tablespoon soy sauce
1 tablespoon cooking wine
For cooking and seasoning:
½ cup vegetable oil
¼ teaspoon salt
¼ teaspoon sugar
1 tablespoon soy sauce

Instructions

Marinating the beef with salt, sugar, oil, soy sauce and cooking wine for about 10 minutes.
Heat ½ cup of oil in the pan over medium heat, carefully add in the green beans, deep fry for about 8 minutes until their surfaces are crisp.
Fish the green beans out and set aside, leave half of the oil in the pan and discard the other half.
Turn to medium-high heat and stir in the dried chili peppers, garlic and ginger, sauté for about 2 minutes until fragrant and browned.
Add the ground beef into the pan and stir fry for another 2 minutes until the beef has changed color.
Stir in the green beans and toss in the salt, sugar and soy sauce, sitr fry for another 2-3 minutes and serve.

Notes

Make sure the green beans are dry before putting them into the hot oil for deep frying.
