On-The-Go Summer Watermelon Parfait

On-The-Go Summer Watermelon ParfaitI love watermelon! Living in NYC, where everything is fast-paced. The best time to enjoy watermelon is on-the-go. This time I am sharing a 10-minute on-the-go summer watermelon parfait recipe.

On-The-Go Summer Watermelon Parfait-IngredientsThe ingredients for this parfait are very simple! Besides greek yogurt, granola and watermelon, I also added fermented glutinous rice for a delicious Asian touch!

fermented glutinous riceFermented glutinous rice is a common Chinese ingredient that can be used to make a variety of Chinese deserts. It’s sweet and sour, great for enhancing the flavor and texture of our watermelon parfait.

Ps: You can find the fermented glutinous rice in most Chinese grocery stores.

On-The-Go Watermelon ParfaitWhat I like to do is making the watermelon parfait for my husband and I the night before and store them with small mason jars in the fridge overnight. The watermelon parfait jars are our perfect on-the-go breakfast the next day!

Here’s a great tip I learned from Watermelon board website: you can eat the whole watermelon! Besides the flesh and juice, watermelon rind can also be used to make dishes. For more information, you can check out this post: Three Ways to Eat Watermelon Rind.

Ingredients
  • 2 cups fresh watermelon cubes (1-inch long)
  • 1 cup granola
  • 1 cup fermented glutinous rice/ fermented sweet rice sauce
  • 1 cup plain greek yogurt
Instructions
  1. Layer half cup plain greek yogurt into the bottom of each two small mason jars.
  2. Spoon half cup crunchy granola and place on top of the yogurt, repeat for each jar.
  3. Layer half cup fermented glutinous rice on top of the granola, repeat for each jar.
  4. Place fresh watermelon cubes on top until the containers are filled to the top.
  5. Sprinkle some granola on top for garnishing.
  6. Serve parfaits immediately to keep granola crunchy.
